The Side: Grilled Asparagus

Asparagus is so much better when it’s crunchy! For a quick grilled side dish, toss asparagus in olive oil, garlic, paprika, salt and pepper. Grill over medium heat to desired texture (a little crunchy is how we like it). You can also wrap asparagus spears with prosciutto and grill until the meat is crispy. DELICIOUS and a little different.

The Main: Cilantro Turkey Burgers on Grilled Romaine

Up the herbs for a tastier turkey burger! Speckled with bright green cilantro, these burgers look as lovely as they taste. Nestled on top of grilled romaine lettuce, you won’t miss the bun. While the burgers are grilling, ([wprm-recipe-jump id=”27843″ text=”jump to burger recipe”]), slice heads of romaine lettuce in half and lightly brush cut-side  with olive oil. Grill cut-side down over medium heat for several minutes on each side until lettuce starts to wilt and is lightly charred. Drizzle with a nice olive oil and balsamic vinaigrette or perhaps a green garlic creamy dressing, then top each with a burger.

Dessert: Grilled peaches

Grilling brings out the amazing, juicy sweetness of peaches and works best with those that are just barely ripe. In advance, slice peaches in half and discard pits, then lightly oil the insides. Once everyone has enjoyed the main course, simply grill the peaches over medium for 4-5 minutes per side and serve. So easy!

Recipes

Cilantro Turkey Burgers

  • 1 lb. ground turkey
  • 1 cup chopped cilantro
  • 2 tsp. minced garlic
  • 1 tsp. salt
  • 1/4 tsp. fresh black pepper
  1. Combine all ingredients in a bowl and use a fork to mix well.

  2. Divide into 4 portions and shape into patties. 

  3. Grill to 165° F.

Green Garlic Dressing

  • 2 stalks green garlic (or scallions)
  • 1/4 tsp. fine grain sea salt (plus more to taste)
  • 2 tbsp. fresh lemon juice
  • 1/3 cup extra virgin olive oil
  • 2 tbsp. ripe avocado
  • 1 tsp. honey (or to taste)
  • fresh pepper (to taste)
  1. Blend all ingredients in food processor, blender or a hand blender. 

  2. Adjust salt, honey and lemon juice as needed.
