Better-Than-Store-Bought Popsicles
Beat the heat with healthier summer treats.
Fresh Fruit Tropical Popsicles
½ cup coconut water
½ heaping cup pineapple, chopped
½ heaping cup mango, chopped
1 ripe banana, peeled
1 tbsp freshly squeezed lime juice (about ½ lime)
3 kiwis, peeled and sliced
In a high-speed blender, blend coconut water, pineapple, mango, banana and lime juice until creamy. Transfer to a glass Pyrex measuring cup for easier pouring.
Set up popsicle molds and prepare to fill. Start by placing one kiwi slice in each mold. Fill each mold ¾ of the way to the top with pineapple-mango puree. Top with additional kiwi slices.
Secure the popsicle sticks and lids and place in the freezer for 4 hours. To release molds, run popsicle under hot water until the mold can be removed.
Blueberry Yogurt Swirl Popsicles
Sally’s Baking Addiction
2 cups blueberries
2 tbsp agave or honey
2 cups vanilla Greek yogurt (non-dairy coconut yogurt or other nut yogurt works well here)
Blend the blueberries in a food processor or blender on high speed until nearly liquefied into a smoothie-like consistency.
Pour the thick blueberry liquid into a large bowl. Stir in the agave/honey. Add the yogurt and very gently mix everything together. If you want a tie-dye swirly look to your popsicles, do not fully blend the yogurt and blueberries. The mixture will be thick. Taste it. If you want it sweeter, add a little more agave/honey.
Pour mixture evenly into each popsicle mold. If your popsicle mold has slots for sticks, you can insert them before freezing. if not, freeze for 2 hours, then put a wooden popsicle stick in the middle. Continue to freeze for an additional 4-6 hours or overnight.
Eat on a hot day. Enjoy!
