Recipes: Healthy Treats for Your Loves

For the Adults: Boozy Cherries
From Yummy Supper by Erin Scott
1 ½ cups fresh dark red cherries (fresh or frozen work well here)
1 cup port
¼ cup honey
1 tsp vanilla
1 dried bay leaf
Heat all ingredients in a saucepan for about 8-10 minutes on medium heat. Remove pan from heat. That’s it! Serve over simple vanilla ice cream or alternative ice cream (dairy-free). This is a simple, beautiful dessert.
For the Fam: Chocolate Muffins
Modified from Giada’s Feel Good Food
1 cup gluten-free flour blend
½ cup almond flour
½ cup unsweetened cocoa powder
½ tsp sea salt
½ tsp baking soda
½ tsp baking powder
½ cup avocado oil
½ cup unsweetened applesauce
¼ cup maple syrup
2 large eggs, room temp, beaten
1 tsp vanilla
1 (12-ounce) bag bittersweet chocolate chips
Preheat oven to 350 degrees. Line 12 muffin cups. In a medium bowl, whisk together flours, cocoa powder, salt, baking soda and powder. In a larger bowl, whisk together oil, applesauce, maple syrup, egg, and vanilla. Blend. Add flour mixture to the wet mixture and add chocolate chips.
Place one scoop of batter into muffin cups. Bake until done, about 25 minutes. Cool before serving. Enjoy these moist and chocolate-y treats!
For the Kids: Avocado Refresher
Modified from Thrive Energy Cookbook by Brandon Brazier
½ avocado, peeled
2 large dates, pitted
1 tbsp vanilla extract
1 tsp cinnamon
1 cup unsweetened almond milk (oat milk may be subbed)
handful of berries
handful of spinach or other greens
handful of ice cubes
Blend and enjoy. This is a perfect 3 p.m. pick-me-up and surely will show your love!
