Super Simple Spring Salads

Refreshing recipes that are insanely easy to throw together.

Summer is almost here! That means shorts and sleeveless tops. It also means it’s time to get rid of your excess Covid weight once and for all! Here are three ridiculously simple salads from our collection of spring recipes to get your clean eating weight loss journey started.

Sugar Snap Pea Salad

2 cups snap peas, chopped
3 radishes, chopped
1 scallion, chopped

Lemon Tahini dressing is a new favorite and we’re eating it a lot. It adds creaminess and richness to a simple salad. Thank you Oh She Glows for this dressing recipe! Put all dressing ingredients into a mini chopper: 1 garlic clove, 1/2 cup lemon juice (about 3 lemons), 1/4 cup tahini, 1/3 cup olive oil, 1/2 tsp salt and a couple of turns of ground pepper.

Toss dressing with salad ingredients and enjoy!

Celery, Almond, Date Salad

2 cups celery, chopped
2 dates (in warm water for 10 mins, then chopped)
1/2 cup pan-toasted almond slivers
Add feta if you’re ok with dairy (1 cup of crumbles)

Dress salad with juice of 1 lemon, 2 tbsp extra virgin olive oil and salt and pepper to taste. Easy and delicious!

Healthy Nest Everyday Salad

2 cups mixed lettuces, chopped
4-5 other veggies (we used chopped tomato, scallions, orange mini peppers, cucumber and avocado)

Add a dollop of hummus and dress with 2 tbsp good olive oil, juice from a lemon, salt and pepper. Easy peasy and always delicious. This is a house fave!
