Simple and Delicious Slow Cooker Recipes

These healthy throw-together dinners are perfect for the busy holiday season.

Some days are just bananas. And you just don’t want to cook. But you’d rather not order out either. These are the times when the easiest recipes are warranted. Here are a couple of my favorite slow-cooker throw-togethers to help you skip the cooking and still put a wholesome dinner on the table.

Mexican Throw Together

1 pound of chicken breast
1 large onion, chopped
4 ounces green chiles, chopped
1 lime, juiced
1 bunch of cilantro, chopped
1 jalapeno, chopped
1 jar salsa verde
1 tsp oregano
1 tsp cumin
S&P to taste

Layer everything in the slow cooker. Cook on low for 4 hours. Shred chicken and mix with onion sauce. Serve on a bed of cauliflower rice with black beans, avocado (or guac), scallions and fresh salsa on top (bowl fashion) or with corn tortillas for taco night.

Asian Throw Together

1 large onion
1 large red pepper
1 pound chicken breast
2 inches of fresh ginger, minced
3 tbsp siracha sauce
2 garlic cloves
¼ cup avocado oil
2 tbsp sesame oil
½ cup tamari (or coconut aminos)
1 cup chicken or veg broth

Mix the broth, ginger, oils, tamari, siracha sauce and garlic together. Put chicken, onion and pepper in slow cooker. Pour liquid over the top. Cook on low for 4 hours. Shred chicken. Serve bowl-style with rice (brown basmati or cauliflower), chicken and top with shredded cabbage, chopped carrot, chopped scallions, and sesame seeds or chopped peanuts.

Dinner really doesn’t have to be any more than that. If you know you’re going to be busy, a bit of planning goes a long way so you have the ‘extras’ in the house for easy throw together at dinner time. In a big pinch, buy a rotisserie chicken and then create the meal.

As always, don’t lose sight of the beauty of mealtime. No matter how hard you worked, it’s a beautiful thing to come together and hear about the day—even when everyone is crazy busy.
